Lenders like Middlefield Bank vice president Al Thompson Jr. are often taught early on to never take anything for collateral that eats.

But that rule goes out the window when it comes to serving Amish clientele.

"If they offer you the horse, you take the horse," Thompson said. "That's their transportation, after all. We take horses as collateral all the time."
